Linalyl acetate is a naturally occurring phytochemical found in many flowers and spice plants. It is one of the principal components of the essential oils of bergamot and lavender. Chemically, it is the acetate ester of linalool, and the two often occur in conjunction (The Merck Index, 15th Ed. (2013), p. 1022, Monograph 5551, O'Neil: The Royal Society of Chemistry.).
Linalyl Acetate [115-95-7] occurs as its (–)-isomer [16509-46-9] as the main component of lavender oil (30±60%, depending on the origin of the oil), of lavandin oil (25±50%, depending on the species), and of bergamot oil (30 ± 45%). It has also been found in clary sage oil (up to 75%) and in a small amount in many other essential oils. (±)-Linalyl acetate [40135-38-4] is a colorless liquid with a distinct bergamot \ lavender odor. 👃🏼 Odor Profile: Fresh, Zesty pleasant smell with very clear bergamot, lavender, and clary sage character. Slightly floral with a woody note.
👅 Flavor Profile: The taste is sweet, fruity, Pear-like with a faintly floral note, It finds some use in flavor compositions for Berry complexes, Citrus flavors, Pineapple, Gooseberry, Peach or Pear imitations, Ginger spice blends, etc. The concentration is normally about 2 to 15 ppm in the finished product (Perfume and flavor chemicals, S. Arctander, Denmark 1969).
⚗️ Uses: This ester is very widely used in perfume compositions as a fresh and sweet modifier/ blender, as an additive to compositions rich in Bergamot, Lavender, Lavandin, Petitgrain, etc. and in fruity top note complexes, etc. With esters of Citronellol and Geraniol, it may emphasize the effect of Bergamot oil, or it supports the fresh notes of citrus oils. The ester does not perform very well in soap unless very solidly fixed and it is quite sensitive to mild acid or mild alkali in presence of moisture (Perfume and flavor chemicals, S. Arctander, Denmark 1969).
Note — Synthetic Linalylacetate displays an overall “cleaner”, less complex odor than the Acetates produced from natural Linalool (from Bois de Rose oil, Ho leaf oil, etc.) (Perfume and flavor chemicals, S. Arctander, Denmark 1969).
